I couldn't find the NOT gate in the component list? If it's not my mistake, why it's not provided?

To get the inverted version of all gates, check the property "Invert Ountputs".

Sure I can use a outputs inverted and gate, connect one input to ground , and get a not. But why not just a not gate?

A not gate is just a buffer with inverted output.
