When I made unstabilized power supplies
I used an empirical method to calculate voltage
the final.
Example:
transformer delivers 10Vac 0.5A I put a diode and
a 470 uF electrolytic capacitor and I got in
output approximately 10*1.41=14Vdc.
With SimulIDE I get about 5Vdc.
In the sinusoidal generator I put semi amplitude = 5,
Average Voltage = 0, Frequency = 50 Hz
I attach a test plan.

If I remember well, semi amplitude means in your case the peak value (semi peak-to-peak).
For 10Vrms, Vpeak = 10*sqrt(2) ~= 14.14 V
